Pumpkin Seed Cheese

2024 is my year for creating delicious and nutritious recipes that are not processed, yet tasty and satisfying, and quick and easy to make.

This ‘cheese’ is a great source of fibre, protein and healthy fats and recreates some of the flavours you can expect to enjoy from regular cheese.

The recipe is versatile enough to add your own favourite ingredients and flavours and is great enjoyed as a healthy snack, when you need a healthy pick me up.

Ingredients

1 cup pumpkin seeds (boiled for 15 minutes and drained) or you can use sunflower seeds
1/3 cup water, reserved from seed boiling
Juice from 1 lemon (or lime, which also works well)
1 tbsp olive oil
4 tbsp tahini
2 tsp miso paste (any variety works well)
1/4 cup nutritional yeast
1 tsp truffle oil (optional)
1/2 tsp smoked paprika (if you like a smoky flavour in your cheese)
1 tsp mixed Italian herbs
Pinch of dried chilli flakes (if you like your cheese a little spicy)

Method

  1. Add all the ingredients to a high speed blender/food processor until it becomes a creamy mixture. If too thick, add a little water until all the mixture is well combined

  2. Remove from mixer and portion out in individual ramekin dishes or one big round dish if serving to guests

  3. Enjoy with our delicious seeded crackers
