Seedy Crackers

These delicious crackers are ‘simply’ full of goodness (fibre, protein, healthy fats) as well as being 100% plant-based and 100% gluten-free.

To make a batch of around 24 small crackers you will need the following:

Ingredients:

1 cup sunflower seeds
1 cup pumpkin seeds
1/4 cup whole flaxseeds
1/4 cup psyllium husks
1/4 cup hemp seeds
1/4 cup sesame seeds
1 tsp sea salt
1.5 cups just boiled water
1 tbsp olive oil

Herbs & Spices: use any flavours you like. I love the combination of these:
- pinch of chilli flakes
- 1 tsp Italian mixed herbs
- 1/2 tsp black pepper

Method:

  1. Pre-heat oven to 160F/320F

  2. Put all the ingredients (except the water and oil) into a large mixing bowl and mix

  3. Then add the water and oil and bring the mixture together

  4. On a large flat baking tray topped with baking paper, start to spread out the mixture to 1/2 cm thickness (as thin as you possibly can without the mixture breaking apart). Using gloves for this will make the ‘spreading’ much easier with a little bit of oil

  5. With a sharp knife, gently score (make lines) to the sizes you want both horizontally and vertically so when the mixture is cooked and cooled down, you can easily break the crackers apart

  6. Bake in the oven for 40 minutes and then turn crackers over and bake for a further 40 minutes

  7. Enjoy with dips or topped with your favourite fillings (I love peanut butter and jam on mine or hummus and thin slices of cucumber)!
